Happy Halloween!
Make these Spideys for breakfast! Use a ladle or a ziplock baggie or a squirt bottle. I just used a ladle and a spoon to make the legs. Use mini chocolate chips or seeds to make the eyes. 🙂
So Delicious sent me a few of their holiday Beverages and the culinary coconut milk. The first thing I opened up was the Nog. Me and hubbs drank a bit. Hubbs finished his and decided it is decent and I left mine as Icouldn’ttake the strong nutmeg flavor. Disclaimer though that I have never had the real nog in my life. :). The only way hubbs is going to finish it is with a good dash of rum, and that is not going to happen during the weekday. So I decided to use up some in a batch of Pancakes. With the abundant nutmeg already in the nog, I added up the rest of the Pumpkin Pie spice ingredients and voila, a spiced up fall pancake that I could devour.

Pumpkin Pie Spice, Coconut Milk Nog Pancakes
Fluffy Multigrain Pancakeswith Pumpkin Pie spice and Coconut milk Nog
Allergen Information: Free of Dairy,egg, corn, soy, yeast. Can be made gluten-free with gluten-free pancake mix.
Makes 4-5 pancakes
Ingredients:
For the Pancakes:
1 cupmy multi-grain Pancake Mixor My Gluten-free Pancake Mix or any mix of choice
⅓ cup So Delicious Coconut Milk Nog ( or ⅓ cup coconut milk + ¼ tsp nutmeg)
⅓+ cup water (depends on the pancake mix used)
½ teaspoon lemon juice
1.5 teaspoon cinnamon powder
¾ teaspoon ginger powder
¼ teaspoon cloves powder
Method:
In a bowl, mix in spices into the dry pancake mix. Add the wet and mix till just about combined. Heat up a girdle on medium heat. Grease if required, and ladle ¼ cup of the pancake mix on it when the girdle/pan is nicely hot. Cook for 3-5 minutes. Flip once the center gets bubbly. Cook for another 2-4 minutes. If making shapes, reduce heat to low-medium and make the shapes.
Serve hot with a dollop of Earth balance and Maple syrup.

I am not one for “egg nog” but Justin loves it, I bought him the Pumpkin Spice and it was quickly gone; I definitely would make a go of it in these pancakes, but you already know I am a pancake girl through and through 🙂

Cutest pancake ever. You’ve got some serious skills because I would have given up after making a mess of the first leg. I really want to try that nog, I usually buy the Vitasoy one but I find it’s pretty thin, and from what I remember, egg nog is way thicker. Not sure how I’d feel about the stronge nutmeg taste though, I like it, but I don’t like when it’s overpowering.

What Indian Food recipe would you like to see veganized?
I would like to see Jalebi, Kathi Rolls, Samosa, and Lassi veganized!! My mom says those are her favourites and I would love to try them too- but only if they’re vegan!

I have Jalebi on the blog, Samosa is pretty much vegan if you use vegan butter in the pastry instead of ghee. Lassi can be made with vegan almond milk yogurt. 🙂 just blend with sugar, some mango puree if you have it and a pinch of cardamom.
