Contrary to popular belief, vegan food is neither complicated, time consuming nor expensive. In fact, a lot of people find cooking easier and more enjoyable since they’ve gone vegan!

Starting with the simple recipes below will help you gain both skills and confidence in the kitchen in no time!

I've divided this post into three sections: First, a selection of vegan recipes from around the internet that are not only quick and easy to make, but also feature frozen or canned vegetables for minimal chopping and prep work, a short list of accessible ingredients and/or are one-pot wonders for easy clean-up.

Next, I've listed some of my favourite vegan cookbooks for quick and easy recipes.
