ingredients

2 cups Cap'n Crunch cereal
1 1/2 cup corn flakes
1 egg
1 cup milk
1 cup all purpose flour
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 pounds chicken breast cut in 1 ounce tenders
vegetable oil for frying

directions

Coarsely grind or crush the two cereals and set aside. Beat the egg with milk and set aside. Stir together the flour, onion and garlic powders and black pepper. Set this aside also.

Dip the chicken pieces into the seasoned flour. Move around to coat well, then shake off the excess flour. Dip into the egg wash, coating well, then dip into the cereal mixture, coating well.

Heat oil in a large heavy skillet to 325 degrees F.

Drop coated chicken tenders carefully into the hot oil and cook until golden brown and fully cooked, 3 to 5 minutes depending on size. Drain and serve immediately with Creole mustard sauce.

    when making the captain crunch chicken after breading it with the cereal mixture is it ok to refrigerate the breaded chicken over night before deep frying it, or will the cereal breading turn soggy in the fridge??

      Not having tried refrigerating it overnight I can't say for certain but I would think the breading would get soggy.

    I forgot to add.... I used a large cast iron skillet & used vegetable oil about half way up. I shy away from frying as a rule because I always get the oil too hot. I turned the heat on med low because I wanted to slowly heat the oil so I didn't overlook the oil. I kept my candy thermometer handy so when the oils reached 325, I wait until it gets to 350 which immediately lowers the temp. I cooked for 3 minutes, then turned for another 2-3 minutes. So moist & juicy & fresh!

    I saw a couple different versions of this but I chose this one because it uses whole eggs. These were so good! I made them 2 days in a row & sent a bunch home with my daughter who loved them as much as I did. Definitely a great go to recipe for tenders or sliced breasts.

    I made this tonight by following the recipe perfectly. I cooked on medium to medium high heat, adjusting as needed. They turned out dark, but not burnt, and crispy. The only thing I will do differently next time is season the chicken pieces themselves rather than mixing the seasoning in the flour. While the breading was good, the chicken was very bland.

    This recipe is absolutely perfect! I used to work at Planet Hollywood when there was one in DC so, I ate these almost daily. This recipe gave me such tremendous flashbacks. Excellent! Will definitely make again soon.

    I have made this about ten times. Most people think it sounds horrible until they eat it. Try it with baked sweet potatoe fries. Perfect meal!

    Boil the chicken first then fry it. That way it wont burn (if you dont want to use the oven). And make sure the oil in the frying pan is hot, otherwise your coating will fall off. Wonderful meal!

    You can also make this in the oven at 350 degrees for 15 minutes. Great for those who don't want to use oil. Turns out crisp and yummy!

    After the initial mishap of the oil being too hot and burning the coating while leaving the inside very uncooked, we figured things out and it was an awesome meal! My only recommendation to people looking to try this out: put the oil over medium-low heat. Seemed to be a good temperature for cooking!
