I always end up buying a box of chocolates or sweets when I have no idea what else to buy as a present, after all, you can never go wrong with that. So why not get the box ready yourself? These coconut truffles are excellent edible gifts that can be enjoyed all year round, no matter the celebration.

And they can't be any easier to make, they are basically 3-ingredient coconut balls, the main ingredients being desiccated coconut, butter and condensed milk. As for decorating them, you can either coat them in more desiccated coconut, cocoa powder or melted chocolate or any kind.

Even so, you really must not add any more sugar, the condensed milk adds more than enough sweetness. I wouldn't recommend the light condensed milk, the sweetened one works the best. After all, it's a sweet treat, right?

Ingredients needed

  • desiccated coconut - it's easy to find in most shops, make sure it's not coconut flour, as that has a different fine texture
  • sweetened condensed milk - if you can find coconut condensed milk, I highly recommend that, but otherwise the regular one is great
  • butter - soften
  • dark chocolate - for coating the balls

There couldn't be a quicker not simpler recipe, it's a matter of mixing the basic ingredients together and shaping them into balls.

  • add the desiccated coconut, soften butter and condensed milk to a bowl
  • use a spatula to mix well until you get a uniform mixture
  • shape out balls - I got 16, but you can get more or less, depending on their size

You can add any other flavouring of your choice, vanilla, orange, lemon, lime and so on. Or just leave it out completely, that's entirely up to you, you don't really need anything else, since the coconut flavour is strong.

How to decorate the coconut truffles

There are a few ways of decorating these beauties - they can either be coated with more desiccated coconut right after shaping the balls, and before chilling them in the fridge, otherwise the desiccated coconut might not stick as well.

If you go for melted chocolate, break the chocolate into pieces, and melt until smooth - I like to melt the chocolate in a bowl set over a pan of simmering water.

Once the chocolate is ready, coat each ball into chocolate, and use a fork to transfer it to a non-stick paper. If you want to add some more desiccated coconut to the truffles, sprinkle some before the chocolate firms up.

Ingredients

  • 200 g desiccated coconut
  • 200 g condensed milk
  • 50 g soften butter
  • 180 g dark chocolate (optional)

Instructions

  • In a large bowl, add the desiccated coconut, soften butter and condensed milk.

  • Use a spatula to mix everything together into a sticky mixture.

  • Shape balls out of the mixture, I got 16, but you can get more or less depending on how big the balls are.

  • If you decorate them with desiccated coconut only, coat each ball into coconut, then refrigerate for at least 30 minutes before serving.

  • If you wish to coat them in chocolate, break the chocolate into pieces, and add them to a bowl set over a pan of simmering water.

  • When the chocolate is melted and smooth, add a ball at a time, and coat well, then use a fork to remove it from the chocolate, and transfer it to a tray lined with non-stick paper.

  • If you want to add more coconut to them, sprinkle some before the chocolate sets.

  • Refrigerate, then enjoy!
